In Scotland Chocolate Tree creates edible art crafted in Scotland with dedication and passion by controlling the entire supply chain. Alastair and Friederike Gower’s mission is to create chocolate by protecting biodiversity and rewarding farmers with a true premium for their crops of heritage cacao varieties.
Cacao is purchased from farmers in Peru, Colombia, Venezuela and Madagascar. These ultra premium cacaos have been fermented and dried to an exceptional level by the farmers at origin. Organic farming on small plantations is in fact the best way to preserve biodiversity and obtain the best organoleptic profiles. Only through careful cultivation and post-harvest processes can the true flavours of Chocolate Tree bars be brought to life. With a perfectionist approach, every single small batch of cacao is then carefully processed at the Chocolate Tree site near Edinburgh.
